Creamy. Chicken Divan
Ingredients
- 2 uncooked chicken breasts, cut into medium size pieces
- 2-3 cups chopped broccoli
- 2 cups instant rice, uncooked
- 2 cans cream of chicken soup
- 1/2 cup mayonnaise
- 1/2 cup milk
- 1 cup chicken broth
- 1/2 cup shredded cheddar cheese
- 1/2 cup water
- 1 sleeve of Ritz crackers
- 2 tbsp melted butter
I combined two of my mom’s classic dishes – Chicken & Rice Casserole and Chicken Divan – to make this delicious, creamy and hearty casserole. Chicken Divan is usually a mixture of chicken, broccoli, and cheese in a creamy sauce and is often served over rice. I decided to just go ahead and put the rice INSIDE the casserole and let it all cook together. The result is a perfectly creamy casserole I know your family will love! And the best part about this recipe – you’ll bake the casserole in the same pan you use to combine all of the ingredients. It truly is a one-pan meal!
Here’s how to make Creamy Chicken Divan:
- Cut raw chicken breasts into smaller cubes/bites and set aside.
- In a casserole dish, mix together 2 cups of rice, 2 cans of cream of chicken soup, the mayo, milk, and chicken broth.Stir together until mixed.
- Chop the broccoli and add to the top of the rice mixture.
- Add the chicken to the casserole. Stir all of it together until well mixed. Add the water to the top and gently stir.
- Bake at 375 for 35-40 minutes.
- Remove from the oven and top with the Ritz crackers. Return to the oven for another 10 minutes.
