Creamy Chicken Divan is an easy, one-dish, comfort food meal!  I combine chicken, rice, broccoli, shredded cheddar cheese and a delicious sauce in one casserole dish, top with Ritz crackers, and cook until creamy.   This casserole is pure comfort food!

Ingredients
  

  • 2 uncooked chicken breasts, cut into medium size pieces
  • 2-3 cups chopped broccoli
  • 2 cups instant rice, uncooked
  • 2 cans cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup water
  • 1 sleeve of Ritz crackers
  • 2 tbsp melted butter

I combined two of my mom’s classic dishes – Chicken & Rice Casserole and Chicken Divan – to make this delicious, creamy and hearty casserole.  Chicken Divan is usually a mixture of chicken, broccoli, and cheese in a creamy sauce and is often served over rice.  I decided to just go ahead and put the rice INSIDE the casserole and let it all cook together.  The result is a perfectly creamy casserole I know your family will love!   And the best part about this recipe – you’ll bake the casserole in the same pan you use to combine all of the ingredients.  It truly is a one-pan meal!

 

Here’s how to make Creamy Chicken Divan:

  • Cut raw chicken breasts into smaller cubes/bites and set aside.
  • In a casserole dish, mix together 2 cups of rice, 2 cans of cream of chicken soup, the mayo, milk, and chicken broth.Stir together until mixed.
  • Chop the broccoli and add to the top of the rice mixture.
  • Add the chicken to the casserole. Stir all of it together until well mixed. Add the water to the top and gently stir.
  • Bake at 375 for 35-40 minutes.
  • Remove from the oven and top with the Ritz crackers. Return to the oven for another 10 minutes.
