I saw this Chicken with Roasted Tomatoes & Garlic recipe on Katie Lee Biegel’s Instagram page and it looked SO good! I tried it out the other night and was pleasantly surprised at how quick and easy the recipe was. We had dinner on the table in about 30 minutes using ingredients I always have on hand.
Here’s how to make Chicken with Roasted Tomatoes & Garlic:Â
- Preheat the oven to 400 degrees.
- Grab a casserole dish and coat the bottom of the dish with olive oil. Add cherry tomatoes and lots of minced garlic.
- Nestle chicken breasts between the tomatoes and top each piece of chicken with Italian seasoning, salt, pepper, grated Parmesan cheese, and a sprinkle of breadcrumbs (optional). Drizzle the top of the chicken with more olive oil.
- Cook for 30 minutes or until the chicken is cooked through.
- I served this dish with spaghetti noodles and spooned some of the delicious garlicky oil from the cooked chicken over the top. Delicious!!

Chicken with Roasted Tomatoes & Garlic is a quick, delicious recipe that is perfect for busy weeknights!
Ingredients
- 2 chicken breasts, cut in half
- 4 tbsp olive oil
- 2 1/2 tbsp minced garlic
- 1 container of cherry tomatoes
- 1 tbsp Italian seasoning
- 1 tbsp Italian breadcrumbs
- grated Parmesan cheese
- salt & pepper
Instructions
- Preheat the oven to 400 degrees.
- Coat the bottom of a casserole dish with the olive oil. Add the cherry tomatoes and 2 1/2 tbsp of minced garlic. Stir together.
- Add the chicken breasts to the casserole dish, nestling them between the tomatoes.
- Top each piece of chicken with Italian seasoning, salt, pepper, grated Parmesan, and a sprinkle of breadcrumbs. Drizzle each with a little more olive oil.
- Bake for 30 minutes or until chicken is cooked through and tomatoes are blistered and roasted.
- Serve over pasta or with a green salad.
