Chicken with Roasted Tomatoes & Garlic is an easy, delicious recipe that is perfect for weeknight dinners!  With just a few ingredients, this dish is full of flavor and comes together in no time.  Save this recipe for those nights when you only have a few minutes to pull dinner together! 

I saw this Chicken with Roasted Tomatoes & Garlic recipe on Katie Lee Biegel’s Instagram page and it looked SO good!  I tried it out the other night and was pleasantly surprised at how quick and easy the recipe was.  We had dinner on the table in about 30 minutes using ingredients I always have on hand.

Here’s how to make Chicken with Roasted Tomatoes & Garlic: 

  • Preheat the oven to 400 degrees.
  • Grab a casserole dish and coat the bottom of the dish with olive oil. Add cherry tomatoes and lots of minced garlic.
  • Nestle chicken breasts between the tomatoes and top each piece of chicken with Italian seasoning, salt, pepper, grated Parmesan cheese, and a sprinkle of breadcrumbs (optional).  Drizzle the top of the chicken with more olive oil.
  • Cook for 30 minutes or until the chicken is cooked through.
  • I served this dish with spaghetti noodles and spooned some of the delicious garlicky oil from the cooked chicken over the top.  Delicious!!

Ingredients
  

  • 2 chicken breasts, cut in half
  • 4 tbsp olive oil
  • 2 1/2 tbsp minced garlic
  • 1 container of cherry tomatoes
  • 1 tbsp Italian seasoning
  • 1 tbsp Italian breadcrumbs
  • grated Parmesan cheese
  • salt & pepper

Instructions
 

  • Preheat the oven to 400 degrees.
  • Coat the bottom of a casserole dish with the olive oil. Add the cherry tomatoes and 2 1/2 tbsp of minced garlic. Stir together.
  • Add the chicken breasts to the casserole dish, nestling them between the tomatoes.
  • Top each piece of chicken with Italian seasoning, salt, pepper, grated Parmesan, and a sprinkle of breadcrumbs. Drizzle each with a little more olive oil.
  • Bake for 30 minutes or until chicken is cooked through and tomatoes are blistered and roasted.
  • Serve over pasta or with a green salad.

    I, also, saw this recipe on Katie Lee Biegel’s instagram account. I just tried it tonight and loved it. You are right…it is an easy, delicious recipe that is perfect for weeknight dinners! I was looking to see if Katie Lee had posted the exact recipe when I stumbled upon yours! Next time I want to try your addition of the Italian breadcrumbs! That is a great idea!
