Baked Zucchini Sticks with Pesto are simply delicious! Zucchini sticks dipped in pesto and then panko bread crumbs, baked in the oven, and served with a side of marinara sauce.  This snack is kid friendly (even my picky one ate them and loved them), flavorful, and so easy!Â
We love zucchini in our family! And I especially love it baked with bread crumbs, a little parmesan, and pesto.  This is a delicious appetizer or side dish for any meal.
Some people like to call zucchini sticks “fries”. Just so everyone is aware – zucchini does NOT and never will taste like a french fry. Don’t be misled by this crazy name! BUT they are a great alternative when you’re looking to be a little healthier.
Baked Zucchini Sticks with Pesto
Ingredients
- 3 zucchini, cut into sticks
- 2 tbsp pesto
- 1 egg
- 1/2 cup panko bread crumbs
- 1/4 cup flour
- 2 tsp oregano
- 1/4 cup grated parmesan cheese
- salt & pepper
Instructions
- Preheat oven to 425 degrees.
- Cut the zucchini into sticks and set aside.
- In a small bowl, combine the pesto and egg and mix well.
- On a plate, combine the panko, flour, grated parmesan, oregano, salt and pepper.
- Place a wire rack on top of a baking sheet and spray with non-stick spray.
- Take each of the zucchini sticks, dip it in the pesto mixture, then the panko mixture. Make sure to completely coat. After zucchini is coated, place the sticks on top of the wire rack.
- Once you've done all the zucchini sticks, bake them for about 20-25 minutes or until outside of zucchini is crispy and browned. Serve with a side of marinara sauce.
