I have to admit…..I’m not a big breakfast girl.  I’d prefer to skip breakfast all together and just wait on lunch (always my favorite meal of the day).  But some mornings I just want a little something to help me get going – especially if I have a busy day. My Acai Smoothie Bowl is the perfect, light breakfast. Frozen acai is mixed with oat milk, protein powder, and ice, blended and then topped with fresh fruit and crunchy granola. It really is the perfect breakfast for all of us non-breakfast lovers out there!
Here’s how to make my Acai Smoothie Bowl:
- In a blender, add 2 packs of the frozen acai, 1/4 cup of frozen berries (if preferred), 1/4 cup of oat milk, 1 tbsp of PB2 powder (or other protein powder of your choice), and a small handful of ice. Blend until you like the consistency. If it isn’t thick enough, add more ice.  If it’s too thick, add more oat milk. I like my smoothie bowls thick so I can eat them with a spoon.
- Pour or spoon the acai mixture into a bowl. Top with your choice of toppings. I love blueberries, cut up bananas, some granola, and sometimes a little peanut butter drizzle.  You could also add almonds, honey, other fruit, coconut flakes, and any other ingredients you love.
Acai Smoothie Bowl
Ingredients
- 2 packs frozen acai, broken into smaller pieces
- 1/4 cup frozen berries
- 1/2 cup oat milk
- 1 tbsp PB2 powder
- Optional toppings: granola, coconut flakes, almonds, fruit, honey, peanut butter, etc.
Instructions
- In a blender, add 2 pks of the frozen acai, 1/4 frozen berries, 1/2 cup of oat milk, 1 tbsp of PB2 powder (or other protein powder), and a handful of ice. Mix until you like the consistency. If it is watery, add more ice. If it is too thick, add more oat milk.
- Pour the blended smoothie into a bowl and top with your favorite toppings.
