Whether you’re packing lunch for work, school, or a weekend on the go, these four easy recipes are flavorful, filling, and make meal planning feel like less of a chore. Bonus: they’re family-approved and super portable.
Let’s dive into four of my favorite versatile meals that you’ll want on repeat!
1. Grilled Chicken Street Tacos

Juicy marinated grilled chicken, warm tortillas, and a sprinkle of fresh toppings—these tacos are simple to prep and full of bold flavor. Serve them fresh for dinner, then pack the components separately for a quick and fun lunch the next day.
Make it for dinner: Grill a batch of chicken breasts with lime juice, fajita seasoning, and olive oil like I do for my Chicken Fajitas. Serve with corn or flour tortillas, chopped onions, cilantro, and your favorite salsa.
Lunch tip: Pack the chicken, tortillas, and toppings in separate containers. Let everyone assemble their tacos on the go—no soggy tortillas here!
2. Chicken Salad Croissants

Make it for dinner: Serve chicken salad with lettuce wraps and a simple side like chips, fruit salad, or sliced tomatoes and cucumbers.
Lunch tip: Wrap croissants in parchment paper for easy grab-and-go lunches. The chicken salad also works well with crackers, lettuce wraps, or sandwich thins if you’re mixing things up during the week.
3. Greek Chicken Fingers

Think crispy chicken tenders with a Mediterranean twist! These are seasoned with oregano, garlic, lemon, and a touch of paprika. Serve with a side of tzatziki or hummus for dipping, and suddenly you’re on a Greek island—ok not really. But a girl can dream, right?
Make it for dinner: Bake or air-fry chicken tenders and serve with a big Greek salad and roasted potatoes.
Lunch tip: Pack the tenders with a small container of hummus, some pita chips, and a few grape tomatoes or olives for a mini mezze box.
4. Ham & Cheese Sliders
