Zucchini Boats with Sausage
Well….this quarantine has made me eat my weight in all the unhealthy things!! My body has been SCREAMING for something good and semi-healthy and these zucchini boats with sausage hit the spot. They are SO flavorful and delicious! I love making them for a quick lunch but we’ve also had them for dinner as well with a big salad. I used turkey sausage to cut down on the fat a little more but you can definitely use regular sausage as well. Here’s to a little healthy eating during this extremely stressful time!
Stuffed Zucchini Boats
Lunch or dinner, this Skinnytaste recipe is simply delicious!!
Ingredients
- 4 zucchini cut in half and scooped out and flesh reserved
- 1/2 onion chopped
- 1 tsp minced garlic
- 1/2 lb Italian turkey sausage you can also use chicken sausage
- 1 cup marinara sauce I prefer San Marzano tomato sauce
- olive oil
- 1/2 cup shredded mozzarella cheese
- grated Parmesan cheese
Instructions
- Preheat oven to 400 degrees.
- Bring a pot of water to a boil.
- Cut the zucchini in half lengthwise. Using a small spoon, scoop out the flesh and set it aside. Put the zucchini in the boiling water and boil for about 2 minutes.
- Brown the turkey sausage. Once browned, remove the sausage and set it aside.
- Add a drizzle of olive oil to the pan. Add the chopped onions and garlic and cook until translucent. Chop the reserved zucchini and add it to the onion and garlic. Add the browned sausage back to the pan and mix well.
- Cover the bottom of a baking dish with a thin layer of tomato sauce. Place the zucchini cut side up in the dish. Fill each zucchini with the sausage mixture. Add a couple of spoonfuls of tomato sauce to the top of each zucchini. Add a tbsp of shredded mozzarella cheese and a sprinkle of grated Parmesan cheese to the top of each.
- Cover with foil and bake for 35 minutes.
