In a small skillet, heat a small layer of oil - about a 1/4 of a cup depending on the size of the skillet - over medium heat. You want the oil to cover the bottom of the pan but not be deep.
Lay a wonton wrapper on a flat surface. Take a small spoonful of goat cheese and put it in the center of the wrapper. Fold the side closest to you over the goat cheese and then fold the opposite side over that. Dip your finger in a little bit of water and rub the inside of the wrapper to seal it together.
Fold in the sides of the wonton like you are wrapping a present. Seal with a little water again.
Fry the wontons in the oil until they are lightly browned on each side. Remove from oil, drain on paper towel and then transfer to a plate.
Drizzle the goat cheese pillows with honey and sprinkle with sea salt and black pepper.
