Preheat oven to 400 degrees. If using a pizza stone, put it in the oven and let it heat up as well. If you don't have a pizza stone, you can flip a baking sheet over and use it as your stone.
On a floured surface, roll out your pizza dough. Cut it in half if you're making 2 smaller calzones. Put one piece to the side while you make the first calzone.
On half of the dough, spread the pizza sauce. Top with shredded mozzarella cheese, top with any ingredients you like, top with a little more shredded cheese and then fold the other side of the dough over the ingredients, covering them completely. Roll the edges of the calzone over and pinch, sealing the calzone.
Brush the top of the calzone with olive oil, sprinkle with grated parmesan cheese, and poke a few holes in the top of the calzone with a sharp knife.
Repeat with the 2nd calzone.
Using a large pizza spatula, transfer the calzones to the hot pizza stone in the oven.
Cook for 15-20 minutes or until the top of the calzone is browned.
