My Chicken Fajita Marinade is a 3 ingredient, super fast marinade perfect for taco or fajita meat.  It’s a simple mix of lime juice, olive oil, and fajita seasoning. Try it for your next Taco Tuesday!Â
Since quarantine started, our family has been cooking a lot more Mexican food at home.  If I can’t go TO my favorite Mexican restaurant, at least I can make fresh, delicious fajitas, tacos, nachos, and quesadillas at home. And it’s a meal I know my kids will always eat!
Make a double batch of this chicken so you can have it for lunch all week long! It’s also delicious in chicken tortilla soup or on top of a taco salad!
How to make the Chicken Fajita Marinade:

- Add 2 tablespoons of freshly squeezed lime juice, 2 tbsp of ooive oil, and 4 tbsp of fajita seasoning to a large resealable bag.  Our favorite fajita seasoning is Chef Merito’s.Â
- Cut the chicken into strips and add to the bag.
- Seal the bag and mix all of the ingredients around in the bag, making sure to get the chicken completely coated.
Marinate the chicken anywhere from 30 minutes to 8 hours.  I usually try to get it in the fridge for at least 3-4 hours. It just tastes better the longer it can marinate.
Serve in fajitas, tacos, quesadillas, or on top of nachos.
Fajita Chicken Marinade
Ingredients
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 4 tbsp fajita seasoning (like Chef Merito's)
- 1 lb chicken breasts
Instructions
- Cut the chicken breasts into smaller strips big enough to put on the grill (if you are grilling).
- In a large, resealable plastic bag, mix the lime juice, olive oil, and fajita seasoning. Add chicken to the bag.
- Let the chicken marinade anywhere from 30 minutes to 8 hours.
- Bake chicken in the oven on 350 for 20-25 minutes or grill.
