BBQ Chicken is synonymous with summer for me! This recipe starts with a delicious dry rub that caramelizes the chicken and then is finished with the EASIEST BBQ sauce for the perfect tangy, sweet flavor.  Throw it on the grill or enjoy it throughout the year in the oven. Either way, you’ll have flavorful BBQ chicken that will make it feel like summer all year long!
There are a few things that just SCREAM summer to me – beach trips, days spent in the pool, lake trips, and always BBQ Chicken for dinner!  We all know the best BBQ Chicken cooks low and slow and takes a little more work than I’d like to put in for a family dinner. This recipe combines all of the flavors of slow-cooked, crispy chicken by starting with a dry rub but speeds up the process with the easiest sauce ever at the end. This chicken is ready in less than an hour and uses ingredients you probably already have on-hand.  It’s summer…..the easier, the better!!
You can use a grill or the oven to make this BBQ Chicken.  I prefer the oven for a juicier chicken but I also have no idea how to use the grill (kind of just an excuse to make my husband always do this part). If you’ve got a great griller in your family, this recipe is perfect for the grill as well.
Here’s how to make my BBQ Chicken:
- Preheat the oven to 400 degrees.
- Line a baking sheet with foil and put the chicken (after washed and patted dry) on the baking dish.
- Drizzle with a little olive oil and spoon the dry rub over all of the chicken, making sure to coat it on all sides.
- Bake the chicken for 25 minutes or until the chicken has an internal temperature of 160 degrees.
- Remove the chicken from the oven and increase the temp to 450.
- While the oven is heating, stir together the bbq sauce and the vinegar. Brush the sauce over the chicken, coating all sides again.
- Return the chicken to the oven and cook for another 10 minutes.
- If using a grill, preheat to 325. Follow steps for the dry rub. Starting with skin side down, grill the chicken for about 20 minutes, then flip over and grill for another 20 minutes.  Baste the chicken with the bbq sauce and return to heat for another 10 minutes or until the internal temperature reaches 165.
BBQ Chicken
My BBQ Chicken is coated with a delicious dry rub and finished with a SUPER simple sauce for a summer dinner that is ready in under an hour!Ingredients
- 2 lbs bone-in, skin-on chicken thighs, breasts, and drumsticks
For the dry rub:
- 1/4 cup brown sugar
- 2 tbsp smoked paprika
- 1 1/2 tsp cumin
- 1 1/2 tbsp chili powder
- 1/2 tsp coriander
- 1 tsp garlic powder
- 1/4 tsp cayenne
- 1 tbsp Lawry's or other seasoned salt
For the sauce:
- 1/2 cup your favorite bbq sauce (I like Sweet Baby Ray's)
- 1 tbsp white vinegar
Instructions
For oven-roasted chicken:
- Preheat oven to 400 degrees.
- Line a baking sheet with foil.
- Rinse your chicken and pat dry. Put the chicken pieces on the baking sheet. Drizzle with a little olive oil.
- Spoon the dry rub onto the chicken, making sure to coat on all sides.
- Bake the chicken for 25 minutes and then remove from the oven.
- Increase the oven temp to 450.
- Brush all of the chicken with the bbq sauce mixture, coating all of the chicken. Return to the oven for 10 minutes.
- After 10 minutes, make sure chicken has reached an internal temp of 165.
For grilling:
- Preheat grill to 325.
- Coat chicken with dry rub.
- Start grilling the chicken skin side down for about 20 minutes. Flip chicken and grill for another 20 minutes.
- Remove from grill and brush with bbq sauce. Return to grill for another 10 minutes or until the internal temperature of the chicken reaches 165.
