Seared Tuna Wontons

Sushi grade tuna perfectly seared and served on a fried wonton, topped with avocado and sriracha mayo.

Ingredients
  

  • 2-3 oz sushi grade tuna
  • Wonton wrappers
  • Vegetable oil
  • Mayonnaise
  • Sriracha hot sauce
  • Salt
  • Course black pepper
  • Olive oil

Instructions
 

  • Heat a medium skillet over medium heat.  Add about 1/2 inch of vegetable oil to the pan.  Once oil is hot, add wontons 2-3 at a time. 
  • Rinse the tuna under cold water and pat dry.  Rub the piece of tuna with a little olive oil.  Cover the top and bottom of the tuna with sea salt and course black pepper.  Use a good amount of pepper.  
  • Heat another skillet over high heat.  
  • While your skillet is heating up, make your Sriracha Mayonnaise by mixing 1 part sriracha to 3 parts mayonnaise. 
  • When the skillet is very hot, add a tbsp of olive oil.  When it begins to smoke, add the piece of tuna to the pan.  Sear it about 15-20 seconds on each side.  You don't want the inside of the tuna to cook - you just want to sear the outside of the fish.  Once it is seared, thinly slice the tuna.  
  • To assemble, take a fried wonton and add a slice of seared tuna.  Top with a thin slice of avocado and a dollop of sriracha mayo.
