Cut the chicken into strips or dice it. Set it aside.
Cut the red pepper and onion into slices.
Mix together the soy sauce, fish sauce, lime juice, brown sugar, garlic, ginger paste, Thai chili paste, salt, and pepper. Set aside.
Bring a pot of water to a boil for the rice noodles. Cook them according to the boiling instructions on the back of the package.
Heat a large skillet over medium/high heat. Add 1 tbsp of vegetable oil and 2 tbsp of the Thai sauce you just stirred together. Once it is hot, add the chicken to the pan, stirring to coat and cooking until its no longer pink. Once it is cooked through, remove from the pan and set aside.
In the same pan, add the red pepper and onions. Cook until they are tender.
Once the vegetables have cooked, add the chicken and rest of the sauce back to the pan. When the rice noodles are done, use tongs to add as many noodles as you prefer to the pan. Stir together until everything is coated.
Top with basil, chopped peanuts, and a little Sriracha (optional).
