Cuban Stuffed Pork Tenderloin

I don't know if I'll make pork tenderloin any other way from now on! This Skinnytaste recipe is SO good, super easy, and tastes like a Cuban sandwich. And its low in calories and fat!

Ingredients
  

For Pork:

  • 1 pork tenderloin
  • 2 oz deli ham
  • 2 oz swiss cheese
  • 1 tbsp mustard
  • 4-5 dill pickles I used hamburger chips

Rub for pork:

  • 1 tsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • good pinch of salt and pepper

Instructions
 

  • Preheat the oven to 425 degrees.
  • Cut the pork lengthwise down the center without cutting all the way through (leave about 1/2-1 inch still together - like a hot dog bun). Open the tenderloin and lay it flat.
  • On one side of the pork, spread the mustard and layer the ham, then cheese, then pickles. Starting with the side with the ham and cheese, carefully roll pork so you have a lengthwise roll. If rolling proves to be difficult, simply close the pork back together. Secure with kitchen string or short skewers.
  • In a small bowl, combine the ingredients for the dry rub. Rub the mixture all over the tenderloin.
  • Bake for 35-45 minutes or until a thermometer reads 160 degrees.
  • Once cooked, cut into slices and enjoy!
