Rosemary White Beans

Zoe's Copycat Rosemary White Beans

Zoe's Kitchen (mediterranean chain restaurant with lots of locations in the South) is one of my favorite quick, pick-up and go places. One of my favorite items on their menu is the Rosemary White Beans. These were SO easy to recreate and tasted awfully close to the "real" thing. They are a great side dish for dinner and would be amazing on a toasted piece of french bread for a quick lunch.

Ingredients
  

  • 3 cans cannelini beans, drained and rinsed
  • 1 1/2 cup chicken broth
  • 1 shallot, minced
  • 2 cloves of garlic, minced
  • 3 sprigs fresh rosemary, chopped
  • 1 tsp oregano, fresh or dried
  • olive oil
  • salt and pepper

Instructions
 

  • Add a tablespoon of olive oil to the bottom of a medium pot.
  • Once hot, add the minced shallot and garlic and cook until fragrant, being careful not to burn the garlic.
  • Add the rosemary and oregano and cook until incorporated.
  • Add the beans and broth to the pot. Let them cook until it all begins to thicken.
  • After 15 minutes or so, season with salt and pepper and taste to make sure you've added enough seasoning and to make sure the beans are soft. Enjoy!
