Dice up 1-1 1/2 cups of fresh strawberries. Add them to a small pot on the stove over low/medium heat with 1/4 cup sugar and 3 tbsp of water. Let the mixture cook, stirring occasionally, for about 30 minutes or until it becomes thick like a jam.
To assemble the galette:
Chop another cup of strawberries, sprinkle with sugar, and set aside.
Preheat oven to 375.
Lay a piece of parchment paper on countertop. Sprinkle lightly with flour and then lay a sheet of slightly thawed puff pastry on the parchment. Use a rolling pin to thin the puff pastry out just a little bit.
Spread a large circle of ricotta or mascarpone cheese into the middle of the pastry. Top it with a layer of the strawberry jam. Add the cut strawberries on top and sprinkle with fresh basil.
Roll in all of the sides so you form a crust (kind of like a pizza crust).
Transfer the parchment paper with the galette to a baking sheet. Bake for 25 minutes or until the pastry is perfectly browned. Sprinkle with powdered sugar and serve. A side of ice cream is strongly encouraged!
